Koji has various kinds of digestive enzymes, such as amylase, protease and lipase, that help break down the organic compounds in your food (i.e. converting starches into simple sugars or proteins into amino acids), making nutrients more bioavailable while releasing live probiotics, prebiotics (β-glucan from oats + oligosaccharides from koji), antioxidants, amino acids and B vitamins except B12.
